I'm back from vacation, which ended with fantastic days in Verona. A total of 3 wonderful weeks in Italy this summer, and my notebook is full of inspiration for what I want to create this fall! 😍

Insalata Caprese is something I've eaten almost every day in Italy. Here comes a pasta salad with the same pure flavors from tomatoes, mozzarella, and fresh basil. In addition, I've added red onion, spring onion, avocado, and shaved parmesan. The salad is tossed with a flavorful balsamic dressing.

Soon it's the weekend, and there are still some summer days left to be enjoyed! 😍 I am spending the last days of my vacation in northern Italy and have now arrived in beautiful Brescia. Before I go out to explore this lovely city, here's a tip from me about an easy yet very delicious cake. This is a moist nut base covered with sweet whipped cream, fresh raspberries, and chopped chocolate. A perfect cake to make with lovely Norwegian raspberries!

Pan-fried salmon fillet goes very well with oven-baked sweet potato, yellow turnips, broccolini, and homemade mashed potatoes, and the combination gives nice colors on the plate. What really elevates this dish, however, is the incredibly good sauce! 😍

Here you have a delicious sheet cake with a little lime and lots of blueberries, topped with a chewy and good coconut meringue on top.

Great to make now that the forest blueberries are in season, but it's just as good to use frozen blueberries.
