This is a really delicious pasta dish!
In terms of taste, it's similar to Spaghetti alla Carbonara, but in a simpler version. Here we use onion, garlic, grated cheese (preferably Italian Provolone, but grated mozzarella or another type works well) and regular Norwegian bacon. Cream and crème fraîche make the pasta dish wonderfully creamy.
Sprinkle with finely grated cheese and chives. Yummy!

The recipe yields 4 servings.
Ingredients:
♥ 500 g pasta tubes (tortiglioni or penne, see tips)
♥ 200 g bacon in slices
♥ 1 tbsp olive oil
♥ 1.5 onions
♥ 3 cloves garlic
♥ 3 dl crème fraîche
♥ 2 dl cream
♥ 1 chicken stock (chef du fond, see tips)
♥ 250 g cheese (Provolone or other cheese, see tips)
♥ ground salt and pepper
♥ small bunch of fresh chives
Method:
Gather the ingredients.

Start by cooking the pasta in plenty of salted water, as directed on the package.
Get a buffet pan (or large frying pan). Cut the bacon into smaller pieces and put it in the pan.

Add a little olive oil and fry the bacon pieces over medium heat.

Remove the cooked bacon from the pan, but leave the fat in the pan.
Add chopped onion and garlic.

Let this cook for a few minutes over medium heat until the onion becomes translucent and golden.
Then add cream, crème fraîche, and chicken stock.

Stir until it dissolves. Grate the cheese finely.

Add the cheese to the pan (save a little for garnish).

Stir until the cheese melts into the cream sauce.
When the pasta is almost cooked, transfer it to the pan.

Toss to combine. Add a bit of the pasta water (start with about 1 dl, and adjust the amount to get the desired sauce thickness). Let the pasta simmer in the cream sauce until it is al dente.

Remove the pan from the heat. Add the cooked bacon. Grind some salt and pepper over it.

Toss and the pasta dish is ready! Sprinkle with grated cheese and finely chopped chives.

Tips:
♥ For the pasta, I've used tortiglioni here. These are slightly twisted pasta tubes with ridges, slightly smaller than rigatoni and a bit larger than penne. Feel free to use other types of pasta for this dish.


♥ I've used regular bacon slices (instead of Italian guanciale or pancetta usually used in carbonara).

♥ I've used 1 chef du fond, chicken (28 grams). Alternatively, you can use 1 chicken stock cube.
♥ If you can find the Italian cheese Provolone, I recommend using it! Provolone is known for its round shape and has a mild and very good taste. I grate the cheese finely so it melts easily in the cream sauce. Alternatively, you can use grated mozzarella or another type of grated cheese.
