Fish sauce with sweet mustard

This fish sauce is so good that the fish dinner becomes a delight!

The sauce is a combination of white sauce and fish stock, seasoned with shallots, white wine vinegar, a bit of brown sugar, a bit of extra butter and – very important – sweet mustard!

This fish sauce is just as suitable for white fish as it is for trout and salmon, see for example Salmon with sweet potato, broccolini and awesome fish sauce!

 

Ingredients:

♥ 1 shallot
♥ 3 tbsp butter
♥ 3 tbsp flour
♥ 1 cube fish stock
♥ 1.5 dl water
♥ 4 dl milk
♥ 1 tbsp white wine vinegar
♥ 1 tbsp brown sugar
♥ 1 tbsp sweet mustard
♥ 1 tbsp butter
♥ ground salt and pepper

 

Method:

Finely chop the shallot and place in a pot. Add butter and set the pot over medium heat.

Let the onion pieces simmer in the warm butter for a couple of minutes.

 

 

 

Whisk in the flour and crumble in the fish stock.

 

 

Gradually add the water first, then the milk, while whisking the sauce. Let the sauce simmer for a couple of minutes until you see it thickening.

 

 

Taste the sauce with white wine vinegar, brown sugar, sweet mustard, ground salt, and pepper. Finally, whisk in an extra dollop of butter.

Tips:

♥ The ingredients can be purchased at most Norwegian grocery stores. I really like the strong and sweet mustard from the series Jakobs Utvalgte, but other types of sweet mustard can also be used.

 

 

♥ Season the sauce with white wine vinegar, brown sugar, sweet mustard, and salt/pepper to taste, and add more than what is stated in the recipe if you find it suitable.
