This is a delightful cabbage salad that combines white cabbage and red cabbage with red onion, spring onions, and parsley.
A fresh yogurt dressing with garlic adds good flavor.
This cabbage salad is excellent as a side dish for grilled dishes!
The recipe yields 4 servings.
Ingredients:
♥ 200 g white cabbage
♥ 200 g red cabbage
♥ 0.5 red onion
♥ 4 spring onions
♥ 1 bunch of fresh flat-leaf parsley
Yogurt dressing:
♥ 200 g Greek yogurt
♥ 1 dl olive oil
♥ 1 lemon, juiced
♥ 2 tbsp liquid honey
♥ 2 cloves garlic, minced
♥ ground salt and pepper
Procedure:
Gather white cabbage and red cabbage.


Gather red onion, spring onions, and flat-leaf parsley.


Cut all ingredients into thin strips.


Put them in a large mixing bowl.
Mix together the ingredients for the yogurt dressing.


Mix the dressing well with the cabbage salad.


Transfer the cabbage salad to a serving bowl.
Let the cabbage salad sit cool for at least 30 minutes before serving (see tips).

'Tips:
♥ If you want a lighter yogurt dressing, you can reduce the amount of olive oil and instead increase the amount of Greek yogurt.
♥ The cabbage salad should be served the same day, but can be prepared an hour before serving. The cabbage softens with the dressing, making the salad much better. Keep cool until serving.
