First of all, I just want to say that I'm not a big banana bread person. I mean, it's OK, but there are just so many other things I'd rather eat.
So when this recipe popped up in my feed, I was like "Yeah whatever," but I figured what the heck, let's try it.
I followed the instructions exactly and got busy in my kitchen while the banana bread was cooking.
Holy crap! This thing came out looking like a work of art! It was so light and fluffy—just like the picture! It didn't sink or anything. My family loved it too.
We ate the whole thing that night. The fresh lemon juice was the catalyst to the flaky texture, which makes sense because baking soda/powder acts as a leavening agent with acid as a catalyst. Plant butter substituted easily without giving up any taste.
