Vil for min del tro det går helt fint. Uten sukkeret blir det litt mindre næring for gjæren, så kanskje ta i litt mer gjær? Å bytte ut med speltmel ville jeg gjort selv og, uten å gjøre endringer. Vet at speltmel skal eltes mindre enn hvetemel, men her var det ikke så mye elting i utgangspunktet, så da går det nok fint det og:)
